Chef goes live at Foodies Festival!

A sun-drenched summer Saturday provided the perfect backdrop for our executive chef, Anthony Garlando, to give a live demonstration at the recent Foodies Festival on south London’s Clapham Common
Foodies Festivals take place around the UK and are billed as ‘the UK’s largest summer celebration of food and drink’. Based on the huge crowds that turned out on Clapham Common on Saturday 7th June, we can see why! Anthony was live in the Chefs’ Theatre, hosted by BBC MasterChef 2012 winner Shelina Permalloo, and drew a full house eager to see him preparing Roast saddle of Cornish Summer lamb.
Anthony explained that Summer lamb is – in his expert opinion! – much better than Spring lamb, having more flavour and a better texture. He also told the rapt audience, which included some regular diners at aqua shard, why it’s important to season meat after it’s cut (to ensure every surface is seasoned, not just the exterior) and how he makes his saffron aioli using the rendered fat from the lamb instead of oil.
Once roasted the lamb was beautifully plated with the aioli, a rich smoky sauce made from peppers, wild asparagus, wet garlic and herbs. Then came the moment everyone had been waiting for, mouths watering – the chance to taste the dish for themselves! Anthony and his team were deluged by diners all keen to try it; the unanimous verdict? Absolutely delicious.
