We think we can safely say that summer’s well and truly here, and with it come new dishes created by Anthony Garlando to reflect the lighter, brighter season both in taste and appearance.

One ‘From The Sea’ dish already proving hugely popular is this Open crab ravioli, made using fully-traceable, sustainable crab from The Real Cornish Crab Co. This family-run fishery give every delivery a QR code, which when scanned gives the date the crab was caught, the name of the boat and even the name of the fisherman!

Following on from our very enjoyable trip with chef Anthony Garlando to meet our poultry suppliers recently we were down on a farm again this week! This time we went with Anthony to Rampisham in west Dorset to visit Capreolus Fine Foods, from whom chef is going to be sourcing some fine English charcuterie.

Anyone who’s joined us for cocktails in the bar at aqua shard will know that our cocktail list is innovative, unusual and – alongside some classics – features many drinks that simply can’t be found anywhere else. One way we achieve this is by constantly challenging our team to come up with new ideas, and there were plenty of those at a recent competition organised by Tanqueray No. TEN gin.

Finding the finest free-range poultry for aqua shard

The provenance of the produce our executive head chef Anthony Garlando uses is extremely important to him. For Anthony, it’s not enough to buy from a supplier just because they have a good reputation or are considered prestigious; he prefers to take the time got to know a producer, meet the people behind the brand name, and forge lasting relationships with them based on trust and mutual respect.

One such supplier is Aubrey Allen, from whom Anthony recently started ordering the free-range chicken which will shortly appear in new dishes on the a la carte menu. They assure chefs and restaurateurs that the poultry and meat they supply is fully traceable ‘from farm to fork’ and that it has been reared raised and slaughtered ethically, kindly and respectfully.

Visit Britain’s highest barbers this Father’s day!

Sunday 15th June is Father’s Day and we have arranged a special treat for all dads joining us for Weekend Brunch – a complimentary visit to Britain’s highest barber! Luxury men’s grooming room Man Made is popping up in our private dining room from 11am-3.30pm and all fathers (and grandfathers, and fathers-in-law…!) ordering the Weekend Brunch menu are invited to enjoy a wet shave, beard trim or quick haircut before or after eating, with our compliments.

Celebrating a year of good people from GoodPeople!

Apart of course from breakfast at aqua shard, there can be few nicer ways to start a bright Spring morning than celebrating the first birthday of GoodPeople Connect, a wonderful organisation helping unemployed Southwark residents into work. We are proud to have worked with GoodPeople Connect since the very beginning, two months before we opened, and to have recruited many of our team through them.

Going live! Anthony Garlando at Grand Designs Live

Everyone at aqua shard was delighted when our executive chef Anthony Garlando was invited to give a live demonstration at Grand Designs Live. This very popular annual home lifestyle and design exhibition took place from 3-11 May at London’s ExCel, and Anthony was given two slots on the busy final Saturday!
